Aging : Blend of stainless steel tanks and barrels. 10 months in 450 L barrels, followed by 4 months of ageing in stainless steel tanks before bottling.
Winemaking : Cold pre-fermentation maceration for 10 days, pumping over and punching down with temperature control throughout fermentation.
