From one of the last century-old Pais vineyards in Colchagua comes this exquisite wine, very different from the Pais wines of southern Chile. This Pais has an incredible colour, very good structure, volume in the mouth, with firm but soft tannins, and notes of raspberry and cherry. The vineyard is a marvel, 150 years old, and without irrigation: it survives with less than 300mm of winter rain.
Medium ruby in color.
Aromas rose petal, unripe red berries, earthy, Potpourri, clove, peony.
Continuing to the palate, flavors of red currant, raspberry, red cherry, red plum. Hints of vanilla, toast, pencil shaving, plum, black cherry, blackberry, wet stone, banking spice, ginger, and a little coffee on the finish.
This is a dry wine with medium-plus acid, medium but firm tannins, juicy medium flavor intensity, and a medium-plus finish. Well-crafted wine with enthusiastic flavors that continue to engage and mingle.
Drink now, but aging would still beneficial and interesting to see how it develops.
Food Pairing: Mediterranean, Spanish tapas, Greek meze, fatty fish like tuna, braised chicken, dishes with mushrooms, soft goat cheese, and Manchego.
