Terroir : Sandy-clay, with limestone scree.
This large parcel in Santenay takes its name from the corm trees that used to grow here. The tree bears tiny russet pears with a soft, sweet pulp, known as corms.
Exhibition : Southeast
In 228-litre barrels for 10 months, followed by 5 months of ageing in stainless steel tanks before bottling.
Winemaking : Cold pre-fermentation maceration for 10 days, pumping over and punching down with temperature control throughout fermentation.
